  • •1 kg boneless & skinless chicken breast (sliced in half and flattened)
  • •1 tsp salt
  • •1 tsp Italian herb seasoning
  • •1 tsp garlic powder
  • •1 tsp onion powder
  • •1 tsp smoked paprika
  • •2 eggs, whisked
  • •150 g plain flour (not all used)
  • •150 g panko or Italian breadcrumbs (seasoned)
  • •Light cooking oil spray
  • •10 soft white tortillas
  • •35 g marinara or pizza sauce per roll
  • •35 g blended low-fat cottage cheese per roll
  • •30 g grated light mozzarella per roll
  • •5 g grated parmesan per roll
  • •Dried parsley
