Ingredients

  • •2 large chicken breasts
  • •Salt and black pepper, to taste
  • •½ cup all-purpose flour
  • •2 eggs
  • •1 cup breadcrumbs (panko recommended)
  • •½ cup grated parmesan cheese
  • •1 cup tomato purée or thick marinara sauce
  • •1 cup shredded mozzarella cheese
  • •2 tbsp grated parmesan cheese (extra for topping)
  • •1 tbsp olive oil
  • •Fresh parsley or basil, finely chopped

Instructions

  1. 1Prepare the chicken Slice each chicken breast horizontally to create thinner cutlets. Season both sides with salt and black pepper.
  2. 2Set up the breading station Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with parmesan cheese in a third bowl.
  3. 3Bread the chicken Coat each chicken piece in flour, dip into the egg, then press firmly into the breadcrumb mixture until fully coated.
  4. 4Cook the chicken Heat olive oil in a pan over medium heat. Cook the chicken for 3–4 minutes per side until golden and crispy. Transfer to a baking dish.
  5. 5Add sauce and cheese Spoon tomato purée evenly over each piece of chicken. Top with mozzarella and extra parmesan.
  6. 6Bake Bake in a preheated oven at 200°C (390°F) for 15–18 minutes, or until the cheese is melted and lightly browned.
  7. 7Serve Garnish with fresh herbs and serve hot.
