- •2 large chicken breasts
- •Salt and black pepper, to taste
- •½ cup all-purpose flour
- •2 eggs
- •1 cup breadcrumbs (panko recommended)
- •½ cup grated parmesan cheese
- •1 cup tomato purée or thick marinara sauce
- •1 cup shredded mozzarella cheese
- •2 tbsp grated parmesan cheese (extra for topping)
- •1 tbsp olive oil
- •Fresh parsley or basil, finely chopped

Instructions
- 1Prepare the chicken Slice each chicken breast horizontally to create thinner cutlets. Season both sides with salt and black pepper.
- 2Set up the breading station Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with parmesan cheese in a third bowl.
- 3Bread the chicken Coat each chicken piece in flour, dip into the egg, then press firmly into the breadcrumb mixture until fully coated.
- 4Cook the chicken Heat olive oil in a pan over medium heat. Cook the chicken for 3–4 minutes per side until golden and crispy. Transfer to a baking dish.
- 5Add sauce and cheese Spoon tomato purée evenly over each piece of chicken. Top with mozzarella and extra parmesan.
- 6Bake Bake in a preheated oven at 200°C (390°F) for 15–18 minutes, or until the cheese is melted and lightly browned.
- 7Serve Garnish with fresh herbs and serve hot.
