Ingredients
- •315 ml lukewarm milk
- •2 tsp instant yeast (or 7 g)
- •1 tbsp honey
- •150 g semolina (plus extra for dusting)
- •350 g all-purpose flour
- •30 g butter, softened
- •1 tsp salt
- •1 onion, finely chopped
- •1 tbsp butter
- •1 tbsp olive oil
- •400 g chicken breast, diced small
- •1 tsp salt (adjust to taste)
- •2 tsp garam masala
- •1 tsp turmeric
- •2 cloves garlic, crushed (or 1 tsp garlic paste)
- •1/4–1/2 tsp cayenne pepper (to taste)
- •1/4 tsp ground cinnamon
- •2 tbsp tomato paste
- •2 tbsp sweet soy sauce
- •60 ml water
- •125 ml cream
- •2 tbsp fresh parsley, chopped
- •150–200 g grated cheese (mozzarella or a pizza blend)

Instructions
- 1Mix lukewarm milk, yeast, and honey in a bowl. Rest 5 minutes until foamy.
- 2Add semolina, flour, butter, and salt. Knead 10–12 minutes until smooth and elastic.
- 3Cover and let the dough rise for 1 hour or until doubled in size.
- 4Heat butter and olive oil in a pan. Sauté the chopped onion until soft.
- 5Add diced chicken, salt, garam masala, turmeric, garlic, cayenne, and cinnamon. Cook 5–6 minutes until chicken is cooked through.
- 6Stir in tomato paste, sweet soy sauce, and water. Mix well.
- 7Add cream and simmer until the mixture thickens.
- 8Stir in parsley and a handful of cheese (optional). Let the mixture cool completely.
- 9Divide dough into 9 balls. Roll each into a small circle. Lightly dust/coat with semolina.
- 10Spread the cooled chicken mixture on each mini pizza and top with grated cheese.
- 11Rest the assembled mini pizzas for 30 minutes.
- 12Bake at 200°C (400°F) for 12–18 minutes until golden and bubbly.
